Sorta Homemade Blueberry Pancake Muffins

I'm totally cheating and giving you a recipe ~It doesn't even have pictures. I have them in my phone somehwere! ~ to start off your week rather than my usually installment of A Southern Series or Ask Single Mom in the South, because I'm currently playing "mom" of five. Lawn Boy's kids are with me during the day for the next few weeks. Five kids is A LOT!  I'm busy cooking, cleaning, referring, chauffeuring kids between our two homes, and taking copious notes in my phone to turn into blog posts when things settle down.

Y'all may remember that my mother was here all spring, watching Sweet Baby B for a month and a half while my sister Evie went back to work for the rest of the school year. You know that's always fodder for the blog.  Even though she thankfully spent most of her time at Evie's she was still here often enough to level a few zingers. I mentioned one she made in regard to my lack of food.

It's not that I lack food, you see, it's that I lack food she'll eat.  Plus, I'm not used to shopping or cooking for a crowd on a regular basis. ~Guess I better get used to that FAST, given my current house guests!~ My children are not big eaters. One chicken breast will feed all three of us for a meal. However, my mother seems to feel I never have any food.  As such, she tries to stock my cabinet for me. ~Which, okay, isn't always a bad thing.

When she left at the beginning of last month, I found myself the lucky recipient of not one, not two, but THREE boxes of pancake mix ~all open, and okay, one was mine and already in there~ plus a box of Bisquick!* I'm not a big Get-Up-In-The-Morning-Make-A-Big-Breakfast kind of girl.  I do have a waffle iron and used to make waffles from scratch fairly often, but I make my own batter and don't usually use a mix.

Needless to say, I'm needing to find ways to use up some pancake mix. One night I made chicken coated with sweet potato and pancake mix instead of bread crumbs.  It looked a little pasty white, but got a seal of approval from both children AND Lawn Boy.  Then the other day, I used up quite a bit with these little gems:

Single Mom in the South's Sorta Homemade Blueberry Pancake Muffins
2 cups complete pancake mix
3/4 cup quick-cooking oats
2 T flax seed
1 cup water
1/4 cup pancake syrup
72 blueberrries ~ about 1/2 pint

Preheat the oven to 350 degrees. Mix first five ingredients in a bowl, stirring to combine.  Spray mini muffin tins with nonstick cooking spray OR line with muffing liners.  Scoop 1.5 TBS ~I used the Pampered Chef Medium Scoop~ of batter into each cup. Lightly press 2 blueberries on the top of each muffin. Bake 15 minutes. Cool in tins on a wire rack for five minutes before removing.

YIELD: 24 muffins
  
*In a related note, between a few other recipes I have typed up in draft AND the pancakes I made for five kids this morning, I only have one box of pancake mix and 1/2 box of Bisquick left!

LOL I wish my Mom would leave me some grocery's when she left my house :)Hope the pancake mix helped take the sting out of the zingers?

Those look good! You do have to get really creative when cooking for so many all the time! I end up making a ton of pastas because it's easy, and feeds my hungry boys! Hope your week is going well with your expanded crew. It's like running a summer camp!!

Now I am hungry. It is funny how each kids is different with eating. I am still teaching them that if you mix the food together, the stuff you don't like does into your stomach with hopefully something that you do.

Tell you mom to deliver food to our house a well...

zingers and mixes - guess they go together. Even though she is your mom, habits and routines changes after you start your own family so hopefully both sides can respect the opinion of the other.

What is it with moms and their zingers? I know doing your own pancake mix isn't too hard, but I've never done it. I'd actually like to instead of making the boxed kind. My youngest loves his with chocolate chips. =) I can't even imagine what your house is like being overrun by kids. Then again, as a teacher, you should have a firm grip on things! Right? heh heh heh
